From flowers to roasted coffee
FloweringFlowering takes place at the end of the dry season, very soon after the first big rain. The fragrant smell of flowers is strongly present because everything blooms suddenly, covering the entire plantation with white blossom.
Sorting and exportation
The parchment removal operations and a selective sorting to obtain the best quality of green coffee are subcontracted to the Beneficio "Jardin de aromas". Then the coffee is exported by boat in bags of 46 kg.

HarvestHarvesting takes place 7-9 months later. Only the ripe, red cherries are picked, hence the need to pick several times over a period of 2 to 3 months.
Roasting
The roasting is done in the country of marketing to stick at best to the taste of the consumer (here in Switzerland, Grain Noir, in Costa Rica : CoopeAtenas).

The "microbeneficio"
It is a micro-factory that allows to depulp, wash to eliminate "honey" that adheres to the grain and dry it (11-12% water) to obtain the "parchment" coffee (of the "parchment" that still surrounds the seed).
Sale
The sale takes place via this site (only in Switzerland or in France, other countries to consult us). Our coffees are aromatic with notes of caramel, nuts, chocolate flavor, very light acidity and bitterness.
